The heat of summer hasn’t hit its peak yet, but the excitement of what’s to come is something we can all relate to. The Great British summer is a time for barbecues, shedding the layers, longer days, and fingers crossed, sunny days. We rarely drink, but it’s nice to be able to have a nice cocktail on occasion. One of my favourites is Pina Colada. With it’s combination of creamy coconut flavour and pineapple freshness you can’t fault it. What better way to cool down and relax than by spending less time prepping and more time enjoying, which is why this super simple 3 ingredient pina colada spritzer is a must try!

One thing I am definitely not is a food blogger. Sure, I love to cook and I love to eat, but I just can’t bring myself to have the patience to set up those beautiful shots and that bring you that beautiful food photography. Even after being aware of that I decided to try my hand at a drinks post, because in my mind setting up the scene in my kitchen and sharing a drinks “recipe” wasn’t at all the same as sharing a “proper recipe”.

I thought a 3 ingredient recipe would be easy peasy, but in true Yaya form I turned a simple idea into a palaver! So, what’s my point you may ask? My point is that being a blogger doesn’t mean perfection, and it doesn’t always work out the way that you’d expect it to, but you just have to get on with it.

That being said, I wanted to not worry about the photography this time around and share with you this delicious recipe that helped cool us off on a balmy Sunday afternoon. It’s all about the drink here, and use your imagination to retouch and restyle my photos in your mind.

Truth is, the only beautiful thing in this shot is the gorgeous Celebrate 1 litre jug from Dartington Crystals. Dartington Crystals is the only crystal company still producing in the UK. They still hand craft many of their items, and I love that their design is simple and classic. If you’re in Devon, you can even make it a day out by going to their visitor centre and take a self guided tour.

I’m a little embarrassed that I didn’t do the jug justice, but I thought I would practice what I preach and stop being so self critical and just get on with this.

Without further ado, here’s my quick and easy recipe.

3 Ingredient Pina Colada Spritzer

Ingredients:

Malibu Rum or Coconut Cove Coconut Liquer

Pineapple Juice

Champagne or White Wine

Optional: Can of crushed pineapple or pineapple chunks

Seriously, this couldn’t be easier to assemble and the best thing is that it can all be suited to your taste. As a non-drinker I opted for more coconut juice and less champagne or rum, but it’s all up to you how you prep it. Here is the way I made it.

Instructions for the Pina Colada Spritzer

750 mL of pineapple juice 

250 mL of champagne or white wine 

250 mL of coconut liquer or coconut rum

Mix all of your ingredients, add optional pineapple chunks or crushed pineapples for texture, and add ice. Then serve, and enjoy!
